The new eatery, Dandelion, is the signature restaurant at the new Delamar Westport, according to the business.
Delamar Hotels, which has a West Hartford location, a Greenwich location and a Mystic location, partnered with “acclaimed” designer, Christian Siriano, for an “exciting venture” at the Delamar Westport Hotel.

The 86-room hotel is “in the heart of Westport” at 1595 Post Road East, Connecticut, an advantage due to the area’s many shopping venues, arts community, coastline, and restaurants, according to the company.

Dandelion, part of GHG Restaurant Collection is led by Corporate chef and partner Frederic Kieffer in collaboration with corporate director and partner Hicham Amaaou, according to the company. “With a vision rooted in the warmth and vitality of the Mediterranean, Dandelion offers a fresh culinary destination that celebrates bold flavors, timeless traditions, and modern sophistication,” the company said in a statement.
“Dandelion, the signature restaurant at the new Delamar Westport, brings the warmth and vibrancy of Mediterranean cuisine to the heart of coastal Connecticut,” a spokeswoman said. “Together, the hotel and restaurant create a destination where design, hospitality, and culinary artistry meet.”
Dandelion also aims to draw “inspiration from the sun-drenched shores of the Mediterranean, blending bright herbs, bold spices, fresh seafood, and rustic vegetables into dishes that are both vibrant and approachable,” the company noted.
But it also is designed to be a gathering place for food lovers, the company said, so “the menu highlights seasonal shareable plates and coastal classics reimagined with a modern twist.”
“Dandelion is a celebration of Mediterranean cuisine at its most alive and joyful,” Kieffer said, in the statement. “We wanted to bring that sense of sun, sea, and conviviality to Westport, in a way that feels both contemporary and welcoming.”

The design of Dandelion was led by Hicham Amaaou, and aims to reflect “the same spirit as its cuisine—natural, refined, and full of light. Guided by his eye for detail and commitment to hospitality, Hicham’s leadership brings together design and guest experience in perfect harmony.”

According to Delamar, Kieffer brings “decades of culinary experience to Dandelion. Known for his refined approach to fresh, seasonal cuisine,” Kieffer has “built a reputation for excellence” at l’escale at Greenwich Harbor, Artisan Restaurants at Southport and West Hartford, La Plage Restaurants at Westport and Mystic.
