Greek Zucchini Fritters

2 zucchini or 500g- shredded and drained
1/8-1/4 tsp red pepper flakes
1 tsp coriander
1/2 tablespoons dried dill
2 tablespoons Fresh Basil
2 tablespoons Fresh Mint
2-3 sprigs green onions
Zest of 1 lemon
2 eggs
1 cup and 2 tablespoons (80g) all purpose flour
1 cup feta cheese
Heat up pan with oil
Drop by spoonful, flatten a bit
Oil pan and fry each side for 2-3 minutes or until brown

I’m going to make Greek zucchini fritters. You want to make sure to get as much of the water out as you can from your zucchini. So now I’m going to add the seasoning. So now we move to herbs and green onion. If you have fresh D, by the way, use the fresh D instead of dried. It’s always so much better. Zest one lemon, two eggs. Now I’m going to add some flour. And remember, I always include the recipe. And last, I’m going to just include the feta. Mix everything until incorporated. This is ready to fry, but I’m going to refrigerate for about 30 minutes to let the flavors marinate. So, you’re going you’re going to warm up your pan and oil it. Drop the zucchini by the spoonful. You want to just flatten it up a bit and maybe mold it into a circle. You’re going to fry each side for about 3 minutes or until you see that it’s brown. Prepare a plate with some paper towel to pick up the oil.
