


This was my first attempt at adding berries as an ingredient. I chose dried cranberries instead of raisins—just a personal preference—and added walnuts, which I love in bread. I saw that some people add the nuts and berries during the folding stage, but I added them during the final shaping.
What’s your experience with that?
Recipie:
- 500 g flour (80% wheat, 20% spelt)
- 325 g water
- 100 g starter
- 12 g salt
Process:
- Mix water and starter first, then add flour and knead for about 5 mins
- Cover and add salt after 30 minutes, followed by the first stretch and fold
- 3 more stretch and folds every 30 minutes
- 4 hours bulk fermentation
- 1st shaping, 30 mins rest on counter
- 2nd shaping, adding cranberries and walnuts
- Rest in basket for 1 hour on the counter
- 10 hours in the fridge
- Bake in cast iron at 230C/445G: 20 minutes covered, 20 minutes uncovered

Personally, l love berry breads. I made a loaf of blueberries and lemon zest recently, and it was delicious with cinnamon and sugar for breakfast.
