    # Ingredients

    * ½ cup superfine almond flour 
    * 2 tablespoons superfine coconut flour 
    * 1 tablespoon powdered erythritol 
    * ½ teaspoon of baking powder
    * 3 medium eggs, room temperature
    * ¼ teaspoon vanilla extract
    * ¼ teaspoon ground cinnamon
    * 1 tbsp coconut oil or butter, optional
    * 2 tablespoons of heavy cream or cream cheese

    # Instructions

    1. Start by gathering all of the ingredients in one place. Also, measure out the ingredients for accuracy.
    2. Then in a mixing bowl, combine the almond flour, coconut flour, erythritol, cinnamon, and baking powder to make a keto pancake mix.
    3. Next, add the eggs, vanilla extract, and heavy cream and beat until smooth.
    4. You can add in 1 tablespoon of melted butter or coconut oil if you choose to, but this is not mandatory.
    5. Next, heat a large non-stick pancake pan over medium-high heat, and spray with some cooking spray.
    6. Add a tablespoon of batter per pancake. Cook the pancakes for 3 minutes per side.
    7. Repeat this process until all the pancakes are done.
    8. Once done, serve these yummy fluffy keto pancakes warm and sprinkled with sugar-free chocolate chips or sugar-free pancake syrup.

     Yield: Makes 8 mini pancakes
