Pretty basic but rice and black beans , broccoli , sweet potato and avocado . A little salt & pepper plus extra virgin olive oil on top. Any recommendations for cheap meals or what I can add to mine ?

    Bowls are so easy! If you want a starch: rice, lentil pasta, quinoa, barley, sorghum or instead do a base of shredded cabbage or riced cauliflower. Veggies and a protein – beans, tofu, soy curls, tempeh, Seitan meatballs.

    The real variety comes from the sauce – a lemon citronette, soy sauce and rice vinegar, tahini sauce, cashew buffalo sauce, Chipotle pecan pesto, chimichurri, vegan pesto, avocado cream…

    Do you find the rice and black beans and sweet potatoes sticking to your teeth causing stickiness on your teeth and some bacterial activation on your gums? I’m trying to plant-based foods that aren’t so starchy

    I make this plus bbq grilled tofu or tempeh for extra protein

    I do something similar.. my go to sauce always is a mix of veganaise and Trader Joe’s green dragon sauce on top 🤤

    Since the avocado has more nutrient dense fats i would mash it into a simple guacamole with lime and salt and a spoon of salsa to use as a sauce and omit the olive oil

    Could do less sweet potato and add wilted greens some kale or spinach

    This looks awesome. I make a very simple meal of rice (short grain brown rice and wild rice), kale, and aduki beans. I sprinkle pumpkin seeds over all of it and then drizzle soy sauce and/or tahini sauce over the top. It’s very simple but so delicious!

    I do something very similar. I toss in some white wine vinegar (get the good stuff), a tiny bit of sesame oil for flavor and a little honey. Soooo good!

    Something crunchy, maybe pepitas. Idk if any nuts would work, dependent on the potential flavoring and chop/cut like coarse roasted chopped garlic and herb almonds.

    Something purple and something red. Maybe purple cabbage and red bell peppers?

    Looks lovely! Maybe some rice to balance out the amino acids in the beans and get to a more complete protein

    Yum I make this all the time but I add a cilantro lime crema made with sour cream or yogurt, jalapeño, cilantro, lime, & salt. Can also make a chipotle crema with canned chipotle peppers in adobo sauce, sour cream or yogurt, lime, & salt.
