Inspired by the delicious Oaten Bread recipe posted recipe posted by u/in2woods (https://www.reddit.com/r/mediterraneandiet/s/aTl7u2Fas3 – highly recommend you try it, it’s really good) I was inspired to try a savoury inspired version. Will definitely be a staple for my week, really tasty and super filling as well:

Savoury Spinach & Feta Loaf

Dry ingredients
* 1 ¼ cups rolled oats (150 g)
* 1 ½ cups almond meal (150 g)
* ½ cup ground flaxseed (50 g)
* 2 tbsp chia seeds
* 2 tsp baking powder
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp dried oregano
* ½ tsp salt + pinch of pepper

Wet ingredients
* 1 ¼ cups Greek yogurt (300 g)
* 2 large eggs
* ¼ cup skim or almond milk (50 ml)

Add-ins
* 250g frozen spinach, defrosted and squeezed until most moisture removed in cheesecloth
* ½ cup feta, crumbled (100 g)
* Handful tasty cheese (30 g, optional)

Method

  1. Preheat oven to 170 °C (fan 160 °C). Grease and line loaf tin.
  2. Mix oats, almond meal, flax, chia, seasonings, and baking powder in a bowl.
  3. Whisk yogurt, eggs, and milk in another bowl.
  4. Fold wet into dry, then stir in spinach and cheeses.
  5. Spoon into tin, smooth top.
  6. Bake 50–60min, check at 50 min with a skewer.
  7. Cool 10 min in tin, then on wire rack. Don’t slice until cool!
