👩🍳 Welcome to Day 1 of my 3 Easy Healthy Chicken Wraps Series! Today is Day 1 of my 3-part series: Easy Healthy Chicken Wraps. Over the next three days, I’ll be sharing three delicious and high-protein chicken wraps you can enjoy for lunch or dinner.
Today we’re making a spicy, creamy, high-protein Buffalo Chicken Wrap that’s quick, delicious, and perfect for meal prep.
This is the first of 3 wraps I’ll be sharing this week—so don’t forget to subscribe and come back for Day 2 & 3!
Ingredients:
• 1 lb chicken breast
• 1 carrot (sliced)
• 2 celery sticks
• 1 small onion
• 2–3 garlic cloves
• Fresh turmeric & cilantro (optional)
• 1–2 bay leaves
• Salt & pepper
Sauce:
• 1 cup Greek yogurt
• 1 tbsp mayo
• 2 tbsp white wine vinegar
• 1 cup shredded carrots
• ¼ cup buffalo sauce
Instructions:
1. Cook chicken with veggies & spices until done. Save that broth if you like? it’s perfect for cooking rice later if you want to boost your meal with even more protein.
2. Shred the chicken, season with salt & pepper.
3. Mix Greek yogurt, mayo, vinegar, buffalo sauce & shredded carrots. Combine with chicken.
4. Fill a tortilla with the mixture, wrap it up, and enjoy with a side salad!
