Brown up a few strips of diced bacon or some pancetta in a heavy Dutch oven. Remove the rendered bacon and set it aside, and leave the grease.
Finely mince an onion, a carrot, and a stalk of celery. Cook for about 5 minutes in the grease. Remove and set aside.
Brown one pound of ground beef, adding a little oil if necessary. Add back in the veggies and bacon/pancetta. Add one cup of white wine, let everything simmer for about 5 mins.
Add a can of tomato sauce or 14 ounces of passata. Add in a cup of chicken broth.
Simmer everything covered for about 3 hours. Salt and pepper to taste. If it’s too thick, just add some of your pasta water.
