Grilling everything using the “shish” method is a game changer.
Takes more prep work/time, but you can grill A LOT of food for A LOT of people insanely fast and consistent.
Best part is, you can buy a rinky dinky charcoal bbq made for Shish grilling, for less than $80 and you can feed an army with it for years.
Another awesome trick, buy some good authentic pita bread, open it in half and put it at the bottom of a tray. Use another piece of pita to help you slide the hot meat/veggies of the skewer into the tray.
For meats especially, the bread soaks up all that juicy goodness and you get the most amazing, sloppiest and soggy bread goodness.
