Meat substitute with foodie appeal (“ooh lions mane mushroom steak? I gotta try that!). It’s also having a “health benefits” moment among the crunchier types. Honestly, this is a bonanza if you only paid for white button mushrooms.
I’ve made an insanely good aioli with them before. Rip it up into smaller pieces and roast them with a little salt and oil until they start browning. Boil garlic until it’s soft and blend mushrooms with the garlic after they’ve cooled down while slowly adding oil and lemon juice. It should kind of look like that puff marshmallow stuff that comes in a jar and it’d be great on loaded fries.

Lion’s mane mushrooms make great vegetarian crab cakes if use them in place of crab. Maybe run it as a special for a day or two
Really good if you slice them and marinate them in a very umami rich mixture. Then sear them hard in a hot pan like a steak. We would make a mushroom ‘demi’ and serve them as a main for vegetarians or people who just like mushrooms.
Alternatively, cut them down and treat them like fried chicken thighs.

They are famous for tasting like lobster when sauteed. They’re super expensive, so you might want to take advantage of your windfall. But don’t substitute them for white button mushrooms.

Y’all just hit a fucking jackpot! Vegetarian “crab” cakes are the first thing I thought of, but just sautéed or seared or roasted… Damn, just watch out for people wanting it on the reg, lol.

Lion’s mane is worth far more than plain white mushrooms. This is a major win, i’d be stoked if these came in by accident. Chunk em up, saute or roast, and run em as a special salad topping.
These are great for vegan/vegetarian “nuggets.” The texture is very similar to cooked chicken or crab meat. They’re amazing!

I just ran a special this weekend using lion’s mane as vegan carnitas. They’re awesome!

Take a nice heavy pan, add some oil, medium high. Sautee on one side for a couple minutes, flip. Couple minutes more flip again then start pressing it. Steak weight or a small saucepan with a towel inside is great. Every minute or 2 flip and press. Eventually it will start resembling a steak. Season, add butter and rosemary to the pan. Keep flipping and pressing until you get a nice sear and it’s cooked through completely. Probably 10-15 minutes of cooking total. Rest, slice and be fucking amazed that you aren’t eating meat. Texture is pretty close to chicken breast. You can do all the pressing and searing and get them like 90% of the way there then chill and throw on the grill to order. Or large dice them after cooking and add to a sautee, use in a taco, slice thin and make a cheese steak, shred them and make a pulled pork substitute, very versatile. Ones on the front tray are manes after searing.
