I made a pork shoulder with an Al pastor recipe, but I didn’t preslice like that. It still turned out really really good. Good flavor, less hassle. Might be worth a try sometime.

Bradley Robinson did a crazy version of this. Using charcoal holders from Weber to do the directional heating.
So how i ended up doing it last weekend I made a super hot charcoal fire, put the spit on and let sit for about 4-5 min, rotated like changing a tire (1, 6,2,5 etc). Then finished at 225 in the smoker until I got 150 internal. It was bangin

Update: it’s been on for almost two hours since I made this post and the internal temp is 140! Going for 150 internal temp. Not long now! The color is a bit burnt but it will be delicious!
Next time – use a microwave spinning tray. You can tie a string to the top, wrap it around a hook on the top, idk, like 50 feet or so, hang it out your smoker, and pull when you want to rotate.
