Harira (Moroccan Light Clear Soup)
Ingredients
• 2 tbsp olive oil
• I small onion, finely chopped
• 2 cloves garlic, minced
• 1 medium tomato, peeled & finely chopped (or 1/2 cup puree)
• 1 tsp ground cumin
• 1/2 tsp ground cinnamon
• 1/2 tsp turmeric
• 1/2 tsp paprika
• 1/4 tsp ground ginger
• 4 cups chicken or vegetable broth
• Small handful vermicelli or angel hair pasta (optional, traditional touch)
• 2 tbsp fresh parsley, chopped
• 2 tbsp fresh cilantro, chopped
• Juice of 1/2 lemon (to serve)
• Salt & pepper, to taste
Instructions
1. Sauté aromatics:
• Heat olive oil in a pot.
• Add onion & garlic, sauté until soft and fragrant (3-4 mins).
2. Add tomato & spices:
• Stir in tomato, cumin, cinnamon, turmeric, paprika, and ginger.
Cook 2-3 mins until spices bloom and tomato softens.
3. Simmer broth:
• Pour in broth, season with salt & pepper.
• Bring to a boil,
, then simmer 15 mins.
4.Add pasta (optional):
• Stir in vermicelli/angel hair pasta.
• Cook 5 mins until tender.
5. Finish:
• Stir in parsley & cilantro.
• Adjust seasoning, add lemon juice just before serving.
Chef’s Tips:
• The lemon is key — it lifts the spices and makes the soup bright.
• If you want it heartier, you can add a few chickpeas while still keeping it light.
• Pairs beautifully with Moroccan flatbread (Khobz).

Traditionally, harira is hardly with the lentil and chickpeas, but the light broth style version is often served as a refreshing starter while still carrying Moroccan spice aromas.
