    Recipe – done with very little planning. ground beef was on sale and needed to be back for 1pm nfl games.

    Batches of 4 – binder for all is two eggs, salt, pepper, grated Parmesan, dollop of sour cream, Worcestershire sauce and bread crumbs until get right consistency.

    Then it’s add 5 lbs 80/20s plus:
    Batch 1 – 1 lb ground pork and blue cheese sauce from yesterdays bar wings
    Batch 2 – 1lb chorizo and fresh cilantro
    Batch 3 – 1lb sweet sausage and fresh basil
    Batch 4 – 1lb hot sausage and fresh parsley

    Smoke at 275 for 2-3 hours (smoker has got cold zones)
