I had a lot of random ingredients laying around and I wanted to get out of my usual flavours for a bit of a change.

I tossed the sweet potato, red peppers, and halloumi in some curry powder, salt and EVOO and roasted it in the oven until the potatoes were soft and the halloumi was crispy.

I cooked bulgur and beluga lentils (separately as I was worried of everything turning black).

I had some parsley that needed to be used so I chopped up several big handfuls.

The dressing is EVOO, lime zest and juice, ginger, garlic, honey, Dijon mustard and salt and pepper.

I combined it all in a bowl and added golden raisins! It came out super nice.
