Ingredients

Salad:
• 1½ cups cooked lentils
• 1–2 tbsp olive oil
• ½ tsp cumin
• ½ tsp paprika
• Salt & pepper
• Spinach
• Radish, cucumber, celery, green onion
• Hearts of palm, olives
• 2 small hard-boiled eggs
• Feta cheese

Dressing:
• 2 tbsp olive oil
• 1 tsp mustard
• Juice of 1 lemon
• Salt & pepper
• 1 tbsp chopped parsley
• 1 tbsp chopped cilantro

Instructions
1. Roast Lentils:
Toss lentils with olive oil, cumin, paprika, salt, and pepper.
Roast at 200°C (400°F) for 20–30 min until crispy.
2. Prep Veggies:
Mix spinach, radish, cucumber, celery, green onion, olives, and hearts of palm in a bowl.
3. Make Dressing:
Whisk olive oil, mustard, lemon juice, salt, pepper, parsley, and cilantro.
4. Assemble:
Add crispy lentils and feta to the salad.
Pour dressing and toss.
Top with hard-boiled eggs.
