2 sheets of phyllo dough
3–4 roasted red bell peppers
1 bowl of canned sweetcorn
2 medium potatoes (cut into small cubes)
3 tablespoons of yogurt
1 garlic clove (crushed)
Salt, black pepper
Vegetable oil (for frying)
3–4 wooden skewers

Cut the phyllo sheets into long strips.
Roll each strip tightly, like a spring roll.
Wrap the rolled strip around a skewer in a spiral shape.
