I typically use a shot glass to punch out the centers of my bagel dough but rather than gather the middles up and make a whole bagel this time I decided to keep them individual and poke their centers out with an old pen body.

My regular bagels I keep in for ~18 minutes so I pulled these at 10.

    Looks tasty and all but as a Montrealer I need you to understand a bagel is not a bun with a hole punched into it. You gotta roll it and all that. It’s supposed to be more scraggly and chewy, like half way to a pretzel. If you made bread with a hole that’s just bread with a hole.
