Mahi Mahi Filet With One-Pot Mediterranean Veggie Medley (~350 Cal)

Recipe: Mahi mahi filet, thawed, salt and pepper. Cooked each side about 3-4 minutes at medium high after searing on high.
Veggie medley: rough chopped okra, summer squash, half an onion, bell pepper, kale, and an heirloom tomato.
Added onion and pepper to modestly oiled dutch oven first on medium high until charred and softened, added okra and squash. Another few minutes until the soften. Then tomato and spices (thyme, oregano, salt, pepper, basil). In last 5 minutes added kale and covered. Took off the heat, added a splash of nice balsalmic vinegar.
It was about a kilogram at the end, but I only ate about 1/3 so ive got left overs.
