Welcome Back to Episode 12 of Getting To Know Your Greek 🇬🇷 Bestie! Today we are making Fig Carpaccio with Prosciutto + Baked Feta!
When I stumbled upon @partiureceber Fig Carpaccio with Prosciutto I just KNEW I needed to try this with baked feta and white honey balsamic vinegar!
Here’s the thing about me…. I grew up on figs every summer growing up in Greece. AND While YOUR family was busy sightseeing historic landmarks in Greece MY FAMILY was STUFFED in a 5 seater car with 8 of us looking over a dodgy cliff top you can’t wait to hear this one.
So, When I say my family would literally die for figs, I’m not joking! Let me paint a picture for you. Imagine the Koutsogiannis family (and then some) on a busy road surrounded by clifftops. Father Koutsogiannis pulls over to the nearest edge of said cliff top, runs across traffic to get onto private property and steals their figs! I can promise you I didn’t steal these figs, but you will be willing to climb mountains for this one!
Ingredients:
10-12 figs halved lengthwise & peeled
1 rectangular piece of feta cheese
1 tsp salt
3 tbsp olive oil, divided
8-10 slices of prosciutto
2 tbsp chopped pistachios
1-2 tbsp white balsamic vinegar
crostini or crackers for serving
Instructions:
Preheat the oven to 400F. Line a small baking dish or baking sheet with parchment paper. Place the feta on the parchment paper and drizzle with 1 tbsp olive oil. Set aside.
Make the fig carpaccio: Peel the figs and then slice lengthwise. Place the figs in rows of 3 (3-4 rows depending on how many figs you have) on a piece of parchment paper. Cover with another piece of parchment paper and then roll with a rolling pin until you get a very thin layer. Transfer to the freezer while you bake the feta.
Bake the feta: Bake the feta for 15-20 minutes to soften and then remove from the oven.
Assemble the carpaccio: Gently transfer the fig carpaccio to a plate, sprinkle over 1/2 tsp salt and top with the baked feta in the center. Add pieces of prosciutto, and chopped pistachios, and drizzle over 2 tbsp olive oil and 1-2 tbsp white balsamic vinegar.

Looks delicious. Did you bake the figs after smashing them.
figs, Italians love em and the rest of the world won't touch a purple scrotum fruit.
Why am I seeing so many fig shorts, I’m not Greek or a fig enjoyer at all 😭
Figs are native to the Middle East, so gross with pork, an animal that eats shit!
Sooooo good❤
