🥢 Egg Fried Rice (2 Eggs – 2 Servings)
Ingredients:
2 eggs 🥚
2 cups leftover rice (cold, cooked) 🍚
2 tbsp oil (vegetable or sesame)
½ medium onion (finely chopped)
2 spring onions (chopped, keep greens separate)
2–3 garlic cloves (finely chopped)
1½ tbsp soy sauce
½ tsp black pepper (freshly ground)
½ tsp salt (adjust to taste)
¼ tsp ajinomoto (optional, for restaurant-style flavor)
Process (short):
1. Heat oil in a pan, add onion + spring onion (white part), sauté.
2. Add garlic, cook till fragrant.
3. Crack in 2 eggs, scramble until set.
4. Add leftover rice, break it up, and mix well.
5. Season with soy sauce, salt, pepper, and ajinomoto.
6. Toss on high heat, finish with spring onion greens.
