This is a fried sticky
rice ball from Vietnam, and it’s one of the coolest
street foods I’ve ever seen. It’s made by adding some soft sticky
rice into hot oil and then breaking the sticky rice up into a bunch
of small pieces where it’s then mixed around for several minutes.
Eventually, it’s shaped back together into
a ball and pressed to make sure everything’s holding together. And then all of a sudden,
almost like magic, it begins to bubble and then puffs
all the way up into a perfect ball. It’s transferred onto a plate where
they carefully press it down and cut it, using a pair of scissors, into a bunch of small
tortilla chip sized pieces. Mmm.
It tastes like crispy mochi.
