i was lazy last week and didn't do anything but this week i'm back at it again with a cold sesame rice noodle – shredded chicken, veggies, and a yummyyy sauce to pour over when im ready to eat. ok honestly this one looks kinda boring but trust it's the bomb it's sooo refreshing ik imma be excited to eat this every day. this is a meal I've never cooked before and a new way of cooking chicken for me so it was kind of a challenge and took me like an hour and a half but that's just because I'm very slow in the kitchen. (plus another 30 min of doing dishes 😭)

1 cucumber and 2 or 3 carrots, 4.5 oz of rice noodles, 1lb shredded chicken, mandarin slices!

sauce ingredients:
.5 cup chicken broth/stock (low sodium)
1/4 cup soy sauce (low sodium)
2 tablespoons rice vinegar
2 tablespoons water
1 tablespoon honey
2 teaspoons sesame oil
2 cloves of garlic (or 4 if you're like me and love garlic)
wisk that all together

how to cook chicken with the sauce:
put chicken breast (1lb) in a large skillet with the sauce. then heat on high until boiling, then turn heat to low and cover for 15-20 minutes or until internal temp of chicken is 165F /74C degrees. take chicken out and shred it up. now with the sauce remaining in the pan add a cornstarch – water mixture of .5 tablespoons cornstarch and .5 table spoons water. whisk in that mixture with the existing sauce and keep the heat on low to let the sauce reduce for a few minutes until it's thicker. i am keeping the sauce separate snd ill pour it over when im ready to eat each meal. I ended up with about 50ml of sauce per portion

*this makes 4 portions

also i'm sorry idk the calories but hopefully you can figure that out yourself. i just put a bunch of stuff together and it tastes good.
