Goose is a meat most people frown upon, as when overcooked it is really gross. Normally this is considered a jerky or sausage meat, but I am on a crusade to change peoples mind

I’ve always wondered if goose was any good. I can’t imagine enjoying meat from an animal that’s such an asshole… though I do have an unlimited supply…

I made a “holiday goose” one year following a traditional goose recipe, and it was disgusting, tasted almost like mutton in terms of gaminess (I love lamb, but hate hate hate mutton). It looks like you’re medium rare, and you cooked it in beef tallow, both things that I think would appeal to me more. Would you say it was gamey, and do you like gamey meats? ( find that people who like gamey meats often say that a meat isn’t gamey even though to people who don’t like gamey meats they’ll say it’s incredibly gamey)

My neighbor gifts me 1 or 2 a year. I’ve always smoked them. This year I’ll try SV. Domestic birds at the supermarket are 15 US dollars a pound so it’s a treat for sure. Congratulations and hope you score some more.
