If you know, you know, it's all in the jiggle, this is the best stock I've made. There's so much collagen in chicken feet. Made 3 gallons, took 3 rounds of cooking in my Instant Pot. 20 minutes high pressure with a full natural release. Chicken backs, necks and feet along with carrots, onions and celery. Enough chicken to fill half the pot. Topped it all with water. No seasoning yet, I'll do that as I use it. Got a big bowl of Schmaltz too, chicken fat if you don't know, that will get used to make dumplings and matzo balls. Bring on the cold weather!!
