It’s not quite traditional stew weather here but any time of year is good for stew IMO. This was a really lovely one, chock full of veg. Mushrooms, onions, garlic, carrots, celery, potatoes, peas, tomatoes in a savory, herby broth. I threw in some white beans for protein and some leftover whole-wheat maftoul as well. Definitely a keeper.
