Got a half pig from a butcher and just wondering why these pork chops look a bit different than I'm used to

    They look different because of the extra meat and fat cap. If it bothers you, trim it off and debone them, and they will look “normal”

    Be careful, they can dry out quickly. Medium – High heat, don’t look too thick. 5 min side

    They’re from the rib end of the loin. You can cook them just like any other chop

    The top two are rib chops for sure, the bottom two look like the end of it. But I would probably eat the bottom two first. Lol

    They are mostly untrimmed just sliced on the bandsaw. Lots of salt, lots of pepper, lots of heat until 155° ish.

    Bottom 2 are blade cut chops the best pork chop the other 2 are rib chops

    Rib end of the loin, where the loin meets the shoulder. Probably the best chops on the pig, in my opinion. Equivalent of a rib eye steak in beef.

    Loin that doesn’t suck, “You bought a pig!” Pork Chops. So insanely good.

  9. Thin cut with salts and pepper in cast iron frying pan on low heat for a long time. Pork jerky.

    The cap of false lean is still on them. That’s actually how I prefer my chops. They have some fat, so they aren’t so dry.

    They look like they can’t from the rib end of the loin vs the loin end. Those darker parts are what often make up boneless rib sandwiches/country ribs, since they look so strange to us as part of the chop. Personally, I prefer them since they are a bit more fatty.

    Those are blade chops, they’re just past the rib, lotta places turn them into country ribs

    They look a bit different cause they are fresh cut from a butcher and not from a grocery store.

    Bottom two are blade chops and top two are closer to rib chops. Both from the bone in loin. Both delicious in their own respect.

    Those are pork chops if pork chops wanted to taste amazing. Seriously, the local Safeway has started bolstering their meat packages by attaching “scrap” parts just like this (and charging the same), but they’re awesome.

    A shit ton of people are wrong on here. They are all rib chops. There has to be a blade bone showing to be a blade chop. That is the legal definition of a pork loin blade chop.

    Those are End Chops, we usually turn them into country style ribs, but since you got a half pig, you got all the of the chops from the bone in loin. Their still good.
