Not entirely sure this counts as BBQ so-called, but damn if this wasn't the most delicious loaf I've ever made. Stuffed with crispy bacon bits, pan-fried mushrooms with dried herbs, and carmelized onions. Even snuck some of that bacon fat back into the mix with a couple duck eggs and some pankooooooooooooooohhhmygod.

Cooked at 220 for 90 minutes, then 275 for another hour. The sauce (ketchup, washyoursister, molasses, honey, gochujang, apple cider vinegar) got applied every ten minutes for the last hour and was supremely sticky and so delicious.

This thing was so friggin flavorful and juicy – it's gonna be tough to top this meatloaf in my book. 🤤

    Here’s my recipe, to the best of my recollection.

    Loaf Ingredients
    2 lbs Ground Beef or Bison
    1 lb bacon, roughly chopped
    1/2 white onion roughly diced
    10-12 cremini mushrooms, sliced
    2 large eggs
    1/2 cup Panko bread crumbs
    2 Tbsp Dried Herbs
    1 Tbsp Salt
    1 Tsp Paprika
    2 Tsp Black Pepper
    1 Tsp Garlic powder

    Sauce Ingredients
    1/2 cup ketchup
    1 tbsp Worshtershire
    1 Tbsp Honey
    1 Tbsp Molasses
    1 Tbsp Gochujang

    Add bacon to cold pan and turn to medium low. Stir occasionally. Bacon is done when dark golden red, and crunchy. Save bacon fat and set cooked bacon aside.

    In another pan, heat 1 tbsp olive oil and fry your mushrooms. Once they start to shrivel, add your dried herbs and season to taste. Once they turn brown, pull and set aside.

    Add 2 Tbsp of bacon fat to mushroom pan, and add onions, stirring occasionally. Cook thoroughly until browning begins. Season to taste.

    Mix ground beef, bacon, mushrooms, onions, eggs, panko, paprika, garlic powder, black pepper, salt into a bowl until fully incorporated. Do not overmix.

    In a small bowl, mix all sauce ingredients thoroughly. Set aside.

    Using parchment paper or wax paper on a cookie sheet, transfer meat mixture and form the loaf. Do not go thicker than 2 inches to ensure even cooking. It can be as wide/long as you desire, but it is imperative you do not go too thick.

    Put loaf in the fridge for 30 minutes to set. Preheat oven (or smoker) to 220.

    Do your dishes.

    Once set, remove from fridge and wax paper and place in oven (smoker) directly on grates. Be sure to have something underneath to catch drippings, preventing flare ups.

    Cook for 90 minutes.

    Using sauce brush, liberally apply first coat of sauce and raise temperature to 275. Cook for one more hour, applying another layer of sauce every ten minutes.
