Used this recipe as my base with some mods:

  • Added about two tablespoons of nutritional yeast and shredded Violife parm
  • I used chickpea penne instead to boost protein
  • Also to boost protein, added a pack of Field Roast sausages and roasted some chickpeas glazed in balsamic vinegar and dusted in garlic powder (from the Thug Kitchen 101 cookbook I bought years ago when I first went vegan and I still swear by it)
  • Topped this with parsley from my patio garden and obviously more parm

This was honestly so great and a really good base pasta for mods! I cannot wait to have this for meal prep this week 🥲
