Tavuk Tava – A Traditional Delight of Turkish Cuisine
Tavuk Tava is one of the most beloved “pan dishes” in Turkish cuisine.
Originating from Ottoman culinary traditions, this cooking style brings practical, hearty, and delicious meals to the table by cooking meat and vegetables together in one dish.
In this recipe, chicken is combined with potatoes, carrots, onions, peppers, and tomatoes. After being mixed with tomato paste and spices, it is baked until tender, then uncovered to develop a golden, flavorful crust.
The result is a dish that is filling, healthy, and visually mouthwatering.

🍲 Tavuk Tava recipe for 3-4 people
Ingredients
• 700 g chicken breast
• 2 red peppers (kapia or similar)
• 3 medium potatoes
• 2 medium onions
• 2 medium carrots
• 6 cloves of garlic
• 1 large tomato
• 2 tbsp tomato and red pepper paste (I used mildly spicy paste)
• 105 ml water (about ½ cup)
• approx. 70 ml vegetable oil (a bit more than ½ cup)
• Spices: paprika, black pepper, thyme
• Salt to taste
Adjust the amounts and seasoning according to the number of servings and personal taste.
The baking dish I used was 4 cm deep and 36 cm wide.

Preparation
1. Cut the chicken breast into chickpea-sized pieces. (I soaked mine in lemon water for 1 hour beforehand.)
2. Dice the potatoes, carrots, peppers, and tomato into similar sizes.
3. Dice the onions slightly smaller.
4. Place all ingredients into a deep baking tray.
5. Add tomato paste, oil, salt, and spices, then mix gently.
6. Pour in the water, mix again, and spread evenly.

Baking
• Preheat the oven to 180°C (350°F).
• Cover the tray and bake for 30 minutes.
• Uncover and bake for another 20 minutes until golden on top.
• (Cooking times may vary depending on your oven, so check occasionally.)
