End of summer calls for one last boat picnic! 🚤☀️ Everyone brings an appetizer, and this year I tried something new, a Mediterranean layered salad dip.

🥒🍅🥕 It starts with creamy hummus, seasoned Greek yogurt, fresh cherry tomatoes, crunchy peppers, cucumbers, feta, olives, and herbs. Bright, fresh, and perfect for scooping up with pita chips.

No forks necessary, just sunshine, friends, and good food! 🌿

Pro tip:
Grate some lemon zest and add Italian seasoning to the Greek yogurt. Add some chopped herbs (I used parsley, basil, and mint) on top-YUM!

Welcome to my boat picnic. What’s a boat picnic, you ask? It’s almost the end of summer. We want to get out of the boat as much as possible. So, we invite friends over and everybody brings an appetizer and nobody can bring a beet salad cuz that’s going to stain the boat or drink red wine. But, okay, here’s what what I’m making. I am making a Mediterranean layered salad. I’ve never made it before, but here’s what I’m doing. So, I started with hummus in the bottom of my bowl. Next up, Greek yogurt with some Italian seasoning. I also did a little lemon zest and um a little salt and pepper. Now, I’m spreading that out on the other side of the bowl. Not too technical yet. Okay, so here’s the bottom of my plate. Hummus on half, Greek yogurt that’s been seasoned with Italian seasoning on the other. I’ve got just a bunch of yummy cherry tomatoes. Cherry tomatoes are my favorite. They have the most flavor and they’re the easiest to grow. Whole Foods grew these for me. So, I’m not not had a successful tomato season this year. Next up, some orange bell peppers. I want a little bit of color and cucumbers. And I am telling you, this is my special Mediterranean dip that I have never made. It’s very pretty. I’m going to cover it with herbs and my favorite cheese on the planet, a little feta cheese. And then I will um again chop some herbs. Okay, that is beautiful. So I also added I added the feta. I need to still add herbs, but I also added some pepperonchinis and some colomata olives, things that I just got at the olive bar at my local yummy supermarket. And drag a pita chip through this. No fork necessary for dinner. This is going to be on repeat. Enjoy.
