Over charcoal for about 1 hour. Had lid on and off, turned over every 15mins or so.
Rested in tin foil for 25mins. Worcestershire, lawrys and pepper.

    Tritip is oddly pretty cheap here in east tn (at least relative to others) I think because people don’t know how to do it right. This here is doing it right.
