What’s your favorite fall soup?!

Roasted Red Pepper & @boursincheese Cheese Soup
w/ Pesto & Mozzarella Grilled Cheese

4 large red bell peppers, quartered
2 sweet onions, quartered
2 cups cherry tomatoes
2 carrots, cut into chunks
1 bulb garlic, top cut off
Italian seasoning, garlic powder,oregano,paprika,salt & pepper
A few sprigs of fresh thyme
Olive oil
Garlic & Herb Boursin Cheese
Fresh basil
1-2 tbsp honey
4 cups vegetable broth
Preheat oven to 400. Add all veggies to a rimmed baking sheet. Toss with olive oil. Add Boursin to the middle of the pan and drizzle with olive and season. Place garlic bulb cut side down in dish and a few sprigs of fresh thyme. Roast for 35-40 minutes. Carefully transfer to a blender. Remove thyme and shake off leaves into blender. Squeeze in garlic cloves. Add vegetable broth, honey and fresh basil. Blend until smooth and serve with grilled cheese.
