  1. Juiciest Chicken Breast with Mushrooms and Mozzarella 🐓

    Ingredients :

    • Mushrooms (your favorite variety): 300 g (10.5 oz)

    • Chicken breasts: 2 pieces (slice a pocket on the side)

    • Baby spinach: 20 g (about 1 cup, lightly packed)

    • Garlic: 2 cloves, minced or pressed

    • Olive oil: 2 tbsp (30 ml)

    • Salt and black pepper: to taste

    • Mozzarella cheese: 6 slices (about 100-150 g or 3.5-5

    oz)

    Instructions:

    1) Prep the filling: Heat 2 tbsp olive oil in a skillet over

    medium heat. Add sliced mushrooms and sauté until

    golden, about 5-7 minutes. Stir in baby spinach and cook

    for 30 seconds until slightly wilted. Add minced garlic, a

    pinch of salt, and pepper, and cook for another minute.

    Set aside.

    2) Stuff the chicken: Carefully open the chicken breasts

    to create a pocket (or slice as preferred for stuffing).

    Spoon the mushroom-spinach mixture into each pocket.

    Season the chicken with salt and pepper on both sides.

    3) Bake: Preheat your oven to 200°C (400°F). Place the

    stuffed chicken breasts in an oven-safe dish. Bake for 25

    minutes.

    4) Add mozzarella: Remove the chicken from the oven,

    top each breast with 3 slices of mozzarella, and return to

    the oven for 10 more minutes, until the cheese is melted

    and bubbly.

    Pro tip: If your chicken breasts are thick, lightly pound

    them with a meat mallet for even cooking.
