    A big pot of soup is one of my favorite things to prepare in bulk and freeze. It ensures that I have healthier food options at my fingertips to combat decision fatigue or physical fatigue; that can trigger impulsive, often poor, food choices. Today’s lunch is simply one of my “emergency” meals that has been sitting in the freezer for a bit. The avocado (and a squeeze of lemon) added freshness. Crusty bread and pesto rounded out the meal.
