Chickpea seasoning
• 1 tsp cumin
• 2 tsp garlic powder
• 1.5 tsp paprika (adjust to taste)
• ¼ tsp salt
• ½ tsp black pepper
• ½ tsp cardamom powder (optional)
• ½ tsp cinnamon powder (optional)
For kale
• 1 tsp olive oil
• 1 tsp lemon juice
• A pinch of salt
Salad Dressing
• 3 tbsp olive oil
• 1½ tbsp lemon juice
• 1 garlic clove, minced
• ½ tsp Dijon mustard
• ¼ tsp salt
• ¼ tsp pepper
Assemble the Salad
• ½ cup cherry tomatoes, halved
• 1 English cucumber, chopped
• ½ red onion, thinly sliced
• ¼ cup feta cheese
• ¼ cup roasted nuts (almonds, walnuts, or pumpkin seeds)
• ¼ cup golden raisins or dried cranberries
• 2 tbsp fresh parsley, chopped (optional – for garnish)
