Hi people. Today we are going to make the traditional Lebanese dish called baba ganosh. So first of all you wash very good four pieces of eggplant the same size what you can see in the picture in the video. Wash very good to remove all the impurities. And then you put in a in a tray to bake. And also you take a knife and uh make small cuts. So so the air to go out when it’s baking. Just put it to bake. Maybe around uh I put this 40 minutes. See this is the way have to be very soft when you touch with a fork and you see that it’s very soft even close to this uh green. Yeah, this one I’m taking now. When it’s very soft, then it is ready. Then you put it on the side to get um to get cold. So when it is ready, you just start peeling this small skin that you see it that is very easy to to take it out. You just have a cut to remove this um this piece and all this skin you remove it. Just leave it what is inside and put it in a separate. Do this for all of them. Sorry, my videos I have to talk in this way cuz my house where I’m making the videos is very busy. Too many kids making noise. So I have to talk after the video. So just bear with me. Okay, now it’s ready. I remove I clean all I remove all the skin. Now you use a tool like this. Uh and you start smashing. It smells very good. SM you cannot put in the mixer because in the mixer you give a different uh consistence which would completely damage. You have to do it by this way or a fork if you prefer. It’s better this way. Then you just cut a lemon. Actually for this four pieces of eggplant you put half lemon. You don’t need to put full lemon. Here I squeeze full lemon but you can put only half lemon. Okay, just go back to our plate and you put half lemon in your eggplant uh with half cup of um tahina. You choose a good tahana. A good tahena is a Palestinian tahena. This very good one. Um, you just mix very well how I’m doing. Just see how I’m doing. Mix very well with lemon. Okay, I think that’s that’s enough. Okay. Yeah. Add your lemon. And then also you can put a little bit uh salt. But salt you put a little bit and then try what is better for you. In my case, I don’t put too much salt because I have kids and I don’t want the kids to eat salty. For me and my husband, we like more salty. But then if you like, you can separate. And uh lemon, you can put lemon with uh one piece of garlic. This garlic make all the difference. It’s very good. So you just smash very good together the garlic and the lemon and you can just mix on your dish. It’s very good. [Music] So just remove all the garlic with salt that you smash this creamy. It will become a creamy paste and you just mix together with your eggplant. Mix well. [Music] See, can you see that is like um if you can see when I take the fork and uh put it up, you can see some how can I say this English? See, I’m putting a little bit more salt because I try it was not enough. See, this is the right one. This is the right consistence. It is ready. So just use a a wide open plate cuz normally you eat of bread. So it’s easy for you to carry with Arabic bread. So just put some in the plate. You can take a fork and make um small island in the middle if you ch exactly like I’m doing. See? Just make a small island. And then you put olive oil on this space. This is how we serve it. You can serve like this or you can do some decoration like I did like I chopped some uh parsley. In this my case, I put coriander, but uh you can put parsley. Actually, we put parsley cuz I didn’t have parsley on time. So, just put some parsley. And if you want, put also a little bit just a small dot for decoration. In the middle of the island, you can put paprika, red paprika. But I did not put in this dish. That’s it. It is ready. So how this is how you serve your babush. That’s it for today.
