Hi everyone, welcome to Cook Stacy Cook. Today we are making salt and pepper fish. This is a very tasty and delicious fried fish recipe. The fish is crispy on the outside and tender and flaky on the inside. It’s savory and garlicky with a slight peppery note. I think this dish tastes much better than the typical fried fish out there. Let me show you how I make it. We will start by finely mincing six cloves of garlic. Then prepare five green onions. We only need a stem part. Cut it into the size of a dice. Next, prepare half of an jalapeno pepper. I am going for a milder taste. So, I am removing the seeds. Simply cut the jalapeno into small pieces. If you like a more peppery kick, you can keep the seeds. We will also need about a quarter of an onion. Any type of onion is good. Here we will cut it into small dice. Now the fish. Most white flesh fish works well for this recipe. I am using some c today. For fish with thick fillet, you can cut it into thick slices. For fina fillet, you can cut it into bite-sized chunks. Marinate the fish with some salt, a touch of sugar, some white pepper powder, and some garlic powder. Mix the seasoning evenly with the fish and let it marinate for about 10 minutes. The last thing we need to prepare is the batter for the fish. Simply mix together some corn starch, allpurpose flour, a little bit of baking soda, some water, and a little oil. Mix the batter until it’s smooth without any clumps. Now we are ready to cook. We will start by preparing the salt and pepper seasoning. In a pan without any oil over medium heat, add some crushed black pepper and some white pepper powder and toast it until you can faintly smell the peppery flavor coming from the pan. Then add some garlic powder, some salt, and a tiny bit of sugar. Continue to toast the seasoning a little bit longer. Then we can remove it from the pan. Next, in a pot or pan, heat up some oil to about 350° F or 180° C. As the oil is heating up, we can mix the fish with the batter. Make sure all the fish is evenly coated with the batter. Once the oil is up to temperature, put the fish into the oil piece by piece. We will fry the fish for about 3 minutes. Do not touch the fish as it fries for the first minute. Adjust your heat to maintain an oil temperature of about 320° F or 160° C. After 1 minute of frying, gently break apart any pieces that are stuck together. Gently turn the fish over in the oil so it picks up color evenly. When the 3 minutes is up, remove the fish from the oil. Let the fish rest for about 10 minutes. When the fish is almost done resting, heat up the oil to 400° Fahrenheit or 200° C. And we will fry the fish again, but this time only for 20 seconds. This second frying is to make the crust of the fish extra crispy. When the 20 seconds is up, remove the fish from the oil and let it drain and cool down a bit. Then we can season it with the salt and pepper seasoning we prepared earlier. You can use more or less seasoning to your taste. At this point, the fish already smells and tastes very good, but we will take it up another notch. Add some oil to a hot pan over medium high heat and add the minced garlic to the pan. Let the garlic sizzle in the oil briefly. Then add the green onion. Stir fry the green onion and the garlic together briefly. Then add the onion and the jalapeno pepper. Now stir fry everything a little bit more. And when you can smell the delicious aroma coming from the pan, we can add all the aromatics to the fish. Now all we have to do is mix the fish and the aromatics together. And we are done. I’m sure your mouth is already watering as you mix the fish because it smells so good. When you take a bite of this fish, you will taste the savory, garlicky, and peppery taste all come together. The contrast between the crispy crust and the flaky fish also make it simply irresistible.
