Hey y’all. Welcome back to my kitchen. Remember um couple weeks ago when we made sauerkraut? Well, let’s just use some of it today. Let’s have a uh Reuben casserole. I thought about making Reuben sandwiches, but it’ll stretch further with the casserole. It’s just um it’ll just be easier to show you how to Well, maybe not. But anyway, the casserole just sounded great. So, first thing we’re going to do is uh we’re going to make the dressing. Now, if you have bottled thousand island dressing and that’s what you want to use, go for it. But it’s so easy just to make this dressing. Let’s let’s make some homemade. So, I’ve got half a cup of mayonnaise. your favorite kind of mayonnaise. Okay. And we’re going to have two tablespoons of ketchup. Just plain ketchup. All right. And we’re going to do um about a tablespoon of grated onion. And I just had a little bitty onion in my onion stash. So, let’s just grate up some of that. And I’m probably not even going to measure it. Just roughly a tablespoon. And I don’t think that’s enough. So, I like my onion. So, let me let me work on this a little bit and get a little more. It’s kind of slow. Okay, that’s more like a tablespoon. It turned out to be pretty much that whole onion because um it’s so fine. It just takes a minute to to make a tablespoon. Okay, so we’ve got our onion and we’re going to use a tablespoon of sweet pickle relish. [Music] And we’re going to use an eighth of a teaspoon oops of smoked paprika. I guess if you wanted to use sweet in this, you could, but the smoked kind of adds to this. So, so that’s our um dressing. And we’re going to just whisk all that together. Of course, you got to taste for seasoning. Perfect. Okay. And we’re going to just set this aside while we get ready to make our casserole. Okay. We’re ready to put our casserole together. And I don’t know how I make a mess. I just make a mess. Okay, so the first thing we’re going to do is grease our 9 by13 baking pan. Um, you don’t have to grease it, but I always just spray it down with a little bit of cooking spray. So, um, go ahead and do that. And then we have some rye bread. You can do pumpern nickel, you can do rye, you can do the the marble, which is what I got today. Um, just whatever kind of bread you would like on a Reuben sandwich is what you what you should use here and pull out. This is thin. So, I’m going to use about about nine slices. If it was thicker, I’d use less, but since it’s thin. And what what we’re going to do, you don’t need to toast this, but you want to just cut it in cubes. And like I said, don’t toast it because you, this is a hearty bread and you want to have a little bit of softness to the bite. You don’t want a crunch. If you didn’t make sauerkraut with me, um just get some sauerkraut from the deli or or um you can get different kinds of sauerkraut without just getting canned sauerkraut. I’ve seen it in the in the deli in um plastic bags. I’ve seen it um you know in the refrigerated section. Just that’s always better. And hopefully you you made your sauerkraut along with me. If not, go back and watch the video and do so. Okay, so we’ve got our bread cubed up. We’re just going to sprinkle it in our pan. This is just going to be the base for our casserole. Okay. Um, now that we have our bread down, we’re going to layer um with with our corn beef. And this is thin sliced deli corn beef. So, just just ask your Now, you can cut this up if you want to. Um, you can cut it up into bite-sized pieces, but I just like the whole I’ve heard people say, “Oh, well, you know, if you cut it up, it’s easier maybe, but this is thin and it’s tender.” I just like the whole piece of meat. So, just layer your your corn beef over here over the bread. Um, go for about a pound. This is actually a little less than a pound. Just a tiny bit less. Not enough to even matter. So, you’re just going to layer your whole pound of corn beef or your whole Now, don’t forget if you will go on my Facebook page, and I’m going to put the uh web address at the end of the video, you can um print off this recipe. I haven’t gotten all of them up yet, but I’m trying to add a few every day. So, okay. So, there’s our corn beef. Okay. Now, we’re going to add our the dressing that we made. Just pour it all over there. If you, like I said, if you have bottled and you would prefer, but this is so easy to make and it’s so much better. And just spread that around. You guys won’t see this video for a couple of days. It needs to sit and get picked up by the algorithm. But we had a popup thunderstorm this afternoon. And this is just a nice cozy rainy day meal. And I like Reuben sandwiches a lot, but this is a little easier, especially if you have kids. This is easier for kids to eat than to pick up a whole big fat sandwich. Okay. So, there is our um dressing. Okay, this is the sauerkraut that we made. I put it in a strainer. You need to strain it and you need to squeeze the juice out cuz you don’t want the uh you don’t want all that liquid in your casserole. This is about 16 oz. I didn’t measure it precisely cuz I’ve been kind of eating off the sauerkraut that we made. I walk by and munch on it every now and then. So, I just finished up the rest of it with this. And again, it’s more or less about 16 oz. You just spread it around. Now, we’re going to take Swiss cheese. If you want to use shredded Swiss cheese, that’s fine. But I just have some slices that I got at the deli when I got the corn beef. So, I’m just going to use I’m just going to lay some slices on it generously. And as it bakes, they’ll melt and blend in with all the sauerkraut and the um dressing. Even if you don’t like Reuben sandwiches, this might convert you. It’s really good. Okay, there’s our um Reuben casserole. So, we’re going to bake this. We’re going to put it in the oven for about 25 minutes on 350. And we’ll pull it out after about 25 minutes. Keep an eye on it the last 5 minutes and we’ll uh pull it out and and cut a piece. Our casserole was in the oven for 25 minutes. Um, I had it sit for 30, but I kept watching it and after 25 it looked really good. So, I went ahead and pulled it before all the cheese just totally disappeared. So, let’s cut a piece. I know I’m not going to eat all that even though it’s tempting. And there is our Reuben casserole. I didn’t get down to the bottom quite far enough to get the bread picked up with that scoop. So, let’s go ahead and get that out now. because I don’t want to waste any of that or miss any of it. Here it is. You’ve got your um there’s your sauerkraut and your Swiss. There’s your roast uh your meat. There’s your bread. just like a a sandwich except you eat it with a fork. So, I hope you’ve enjoyed this. I hope you watched it all the way through.
