    Forget the spatchcock look at that amazing crispy skin!

    By way of explanation I think with the other commentators are saying is that it’s not fully spatchcocked. You haven’t shown the other side but basically you use a shears to cut the spine out flip it over to where it is now , and then do one CPR press on the chest to flatten the whole chicken out For the “full spatchcock ™”.

    First off, this looks delicious as shit. But secondly you missed the last step of spatchcocking where you apply strong downward pressure on the top of the breast in order to flatten the whole thing. Then optionally you can tuck the wings underneath.
