I had forgotten how much I like a good omelette breakfast sandwich. This was a one-egg omelette with Flatiron Pepper Co Hatch Green chili flakes, diced pepperoni, and Gouda cheese inside, then topped with a slice of American. Served on a buttered and toasted challah roll, with my homemade maple roasted garlic sauce and some Marie Sharp’s habanero sauce. Then wrapped, like all good breakfast sandwiches!
