Oberene rolls exist all over the world. There’s involtini in Italy, Nagubiani badani in Georgia. And these baked oagene rolls with feta and mint from my house in London. You start grling slice of oagene until they’re tender. Then stuff them with this lemony feta ricotta mixture. Roll them up and nestle them into a gently spiced tomato sauce. Then top it with a load of mozzarella before baking it. Finish it off with pine nuts and crispy mint leaves for a bit of texture. It’s summer ingredients but utilized in a really comforting way. Make this one next time you’re having a dinner party as part of a bigger spread. It is such a winner.
