    Does your temperature probe handle direct flame? I use mine to get to an internal temp of 118 and then remove it when searing.

    Alright fam, honestly, after I looked at this magnificent piece salted, is dry brining only for thick steaks? I tried with some cuts of sirloin that were 1-2” and it was salty like jerky, and chewy as well done.
