One of the reasons there are variations in Choice is because maturity is also a factor. It’s possible to have beef that marbled like Prime but simply too mature to be graded as Prime. Also, beef from a cow can never be graded Prime no matter what. Only beef from a steer or heifer can be graded Prime.

I used to have access to no roll Angus sold by the share. My friend would get 3 or 4 calves raise them and send them to the butcher. He literally sold 1/4 or 1/2 shares to his friends for basically the butchers fee because he liked to have a few head on the farm. The majority of his acreage was leased by another farmer. RIP Elbert.
