Dina Russell, the lazy gardener. You might think this is going to be tough, but I did this with a really big old traditional zucchini the other day and it came out soft and sweet and delicious. To this, I’m going to add something acidic as I did yesterday. This is my homegrown tomatoes, a mix of cherry, plum, whatever I had, and some commercial marinated articho carts. Tomatoes have been added. Homegrown is different. I’m back and the next step is to add all those artichokes. I’ve done this. Added the whole jar. Even the drags of the jar. Any bits left over, I’ll make into soup. It’s all about food rescue and not wasting. And that jar is certainly all about that. Check us out. Join us today. Added parsley when you weren’t looking. It’s going to be great. My zucchini and artichoke and tomato stew is bubbling away on the stove. It’s reducing. Going to have a tea.
