There used to be an Italian steakhouse in Saigon that kind of blew my mind with the herbs and spices you could use on a really nice piece of steak and gave me some inspiration for this cook.

Seasoned the ribs with brown sugar, oregano, basil, fennel, garlic, and salt. Did a normal 321 cook and glazed with honey and balsamic vinegar for the last hour. Turned out great!

My wife made the panzanella salad with dried baguette chunks, mozzarella, lemon pepper cucumbers from the garden, farmer's market tomatoes, onions, fresh basil, and olive oil/balsamic dressing.
