A mum-of-four has shared her simple recipe for lasagna soup, which is perfect for back-to-school season as it’s easy to make and requires just one pot – and it’s sure to be a hit with the whole family

As the back-to-school season gets well underway, you might be on the hunt for easy yet nutritious dinners that will satisfy the whole family. A fantastic choice is a scrumptious lasagna soup.

It’s straightforward to prepare, requiring just one pot, which also means less washing up. This soup recipe was recently showcased by food influencer and mother-of-four Ashleigh Bovard, who frequently posts cooking videos on her Instagram page.

Sharing a video of her cooking the soup, she wrote: “This is a meal the entire family loves! It’s an easy, one-pot meal, perfect for back-to-school season!”

Ashleigh’s followers were quick to respond, with one saying: “I made this tonight and it was so easy and so yummy! Thanks for the inspiration.” Another chimed in: “Immediately adding to roster next week!!”

One-pot Lasagna SoupIngredients:One to two lbs of cooked ground beefOne 28 oz. jar of marinara sauceOne cup of onions, finely choppedOne 14-oz. can of diced tomatoesOne 32-oz. container of beef or chicken bone brothA tablespoon of minced garlicA teaspoon of onion powderA teaspoon of Italian seasoningA teaspoon of cajun seasoning (1/4 if you want less spice)16 oz. of heavy cream10-12 lasagna sheets broken into pieces

Optional toppings:

Ricotta cheeseParmesan cheeseMozzarellaMethod

Begin by sautéing the onions and garlic in olive oil or butter. Drain any grease from the ground beef and then add into the pot.

Add in the marinara sauce, diced tomatoes, broth and seasonings. Stir and cook on medium for one hour.

Then add in the heavy cream and broken lasagna sheets. Cook for an additional half an hour on high or until the lasagna noodles are ready. Serve in a bowl and top with your favourite cheese.

For cooking in a crock pot, Ashleigh suggests: “If you want to use a crockpot, do 3-4 hours on high (cook the meat before placing in crockpot) and then add the lasagna noodles and heavy cream and cover on high for another 30 minutes.”
