Smoky Pumpkin Black Bean Soup 🎃

Ingredients (serves 4):

1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1 can (15 oz) pumpkin puree
1 can (15 oz) black beans, drained & rinsed
3 cups vegetable broth
1 tsp smoked paprika
½ tsp cumin
Salt & pepper, to taste
Juice of 1 lime

Instructions:

Heat oil in a pot. Sauté onion and garlic until fragrant.
Stir in pumpkin, beans, broth, paprika, and cumin.
Simmer 15 minutes.
Blend half the soup for creaminess, then stir it back in.
Add lime juice before serving.
