My boyfriend Marty’s favorite side dish is a super easy cauliflower salad. I like a more elevated version. I’m sharing both recipes with you. You can tell me which one is best, and I’ll let Marty know if he’s right or not. Both versions start with one medium head of cauliflower, cut into florets, and seasoned with a quarter teaspoon each of salt and garlic powder and an eighth of a teaspoon of black pepper. Toss them well so the seasonings get into these seedy little nooks and crannies. Okay, Marty’s version! Stir in two tablespoons of Italian dressing. I like to let it sit in the fridge for 30 minutes to 2 hours, but you don’t have to wait. Stir in a quarter cup of shredded mozzarella cheese, and I like to top mine with some finely chopped red onion. Marty doesn’t like the onion on his, though. The more elevated version of this salad has a simple homemade dressing. Which is great if you don’t have a bottle of Italian on hand. Whisk together three teaspoons of oil with two teaspoons of vinegar and three quarters of a teaspoon of honey. Once that’s blended, add half a teaspoon dried oregano and a quarter teaspoon of salt. Make sure you season those cauliflower florets just like I did before. Then stir in two tablespoons of chopped red onion and pour the homemade dressing over the top and stir. Pop that in the fridge for a bit if you have time. Then, just before serving, add in a quarter cup of freshly grated parmesan cheese, a handful of torn fresh basil leaves, and some cracked black pepper. The fancier version only takes a few extra minutes, but I think it really elevates the salad. Tangy, crunchy and full of bright flavor. But Marty’s is easy and so tasty too.
