As a complete novice, after turkey leg and salmon, I tried roadkill chicken today. Each chicken weighed 3.1 pounds. I first let it smoke for 1.5 hours at 230°F. Then I heated it up to 360°F for 20 minutes until the breast reached 180°F. Let it rest for 10 minutes. I've never had such tender and juicy chicken breast.
