There is nothing better than roasted chicken and potatoes, especially when it’s all made in one pan. To make the marinade, combine ghee, roasted red pepper paste, and minced garlic. Add in ground coriander, paprika, fresh thyme, parsley, and dill. Squeeze in some lemon juice. Get this all combined, then toss in your chicken thighs. Add salt, pepper, and let this sit for at least 30 minutes. Add baby potatoes to a baking dish. Drizzle with oil and salt. Then toss it so the potatoes are nicely coated. Lay the marinated chicken over the potatoes, making sure that the skin side is facing down. That way when you flip the chicken halfway through the baking, the skin side is facing up at the end, which helps get the skin nice and crispy. I made a quick salad to go with this, which is just some chopped up cucumber, green onion, tomatoes, and fresh parsley. Dress it up with olive oil, pomegranate molasses, lemon juice, and salt. Add one more drizzle of pomegranate molasses once it’s all plated and enjoy.
